This may seem absolutely crazy, but I made zucchini bread for the first time in my life, just this weekend. I know, I'm 34 years old and it's taken me this long, but I only started liking zucchinis in the last couple of years. And when my dad supplied me with all kinds of goodies from his garden, including ridiculous amounts of zucchini, I started getting creative.
Zucchini Bread (modified from AllRecipes.com)
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup semi-sweet chocolate chips
Grease and flour two 8 x 4 inch pans. Preheat oven to 325°. Sift flour, salt, baking powder, and soda together in a bowl. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and chocolate chips until well combined. Pour batter into prepared pans. Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
Now, I don't exactly know if I did something wrong, but this bread has more of a cake-like texture than I was expecting ... but I don't mind that one bit! Even my vegetable wary kids liked this bread and were asking for more. It must have had something to do with the chocolate chips {grin}.
